Do I need to replace the sheetrock before replacing the backsplash?

We’ve just removed the tile off my kitchen backsplash as part of a major reno project. My contractor is recommending we replace the sheetrock, but I don’t see any purpose since we’re about to re-tile and the wall seems like its in pretty good shape. How do I know if I should replace the sheetrock?

Yes you should, you want to install the new tile on a new flat / smooth area

Usually when you remove the backsplash, it damages the drywall behind. One option is to skim coat the wall but it does not always work. The other option is to laminate the wall with a new drywall 1/4" or 3/8" installed with compound and then install the new tiles on top of it.

Where are you installing the backsplash?
If it is in the kitchen… no you do not need to replace it.
If you are doing work in the bathroom, in a wet area, then you should have it replaced for the appropriate sheetrock/backerboard required by the local building code.
