What a good and important question!
I have seen contractors provide everything from notes scribbled on the back of a napkin to unnecessarily complicated and burdensome 20+ page contracts. Like any construction project, a good contract is a must.
The American Institute of Architects (AIA) provides many excellent Owner/Contractor construction documents, including those specifically designed for smaller remodeling projects, that are fair and reasonable towards both parties. This is an excellent place to start and will, at the very least, give you some insight as to what should be contained in your contract documents. You can find out more about AIA documents at:

This is how i do it .
We hereby propose to do the following numbered items
1 install new kitchen
2 install new bath
3 install new windows and doors
For the sum of 50,000 fifty thousand dollars
Payments as follows 1/3 down 2/3 after item 2 is complete 3/3 final
The entire job should take 3 weeks to complete
( weather permitting)
Contractor signature__________________________________________________________________date__________
customer signature ________________________________________________________date
You will need to be very specific about the numbered items as far as SQFT quanity brand and products you will use .
To get pretty creative, only if you know the basic documents that go into a contract. Get microsoft excel, works great with mocking up your own good looking, professional contracts, invoices, or anything such. And is simple to use once you get the hang of it.
