Leveling new floor in an old house

Replacing the floors in a very old house (100+ yrs) and not sure how to level the new hardwood. Wedges of some sort?

If the old floor is coming off, it will be easy to shim the new wood boards, if you realize that will not work, then level the main floor boards before the hardwood floor is installed. Old homes have that problem, best to address while renovating. Once you move in you will not fix the floor or varnish again. After the fact it will be very costly.

most of times subflooring should be removed get access to crawl space to repair or replace floor wood joists ,trying leveling them max possible .
