What are the pros/cons of each? What do you most commonly see installed? I’ve heard marble can be harder to maintain and will stain, and I know granite has been the most popular in the past. But with all of these new materials, I’m not sure which is best for my kitchen.
Personally we prefer to install Quartz countertops. It mimics the look of stone but needs less maintenance. If you put a hot pots on it, knives, and most stains are no match when in comes to Quartz countertops. Quartz also comes in vibrant colors and patterns that look like granite and marble.

Hardness differs among these categories, the reason we care are things such as if you are going to do an overhang for a sitting area. Quartz can extend up to 18" without the need for supports that would hit you in the knees, granite can extend up to 12" without supports.
Marble, though very pretty is quite porous and must be maintained, such as sealing it. It can stain, scratch so be cautious with cleaners.
I usually only recommend marble in homes north of a million dollars.

Is it actually more expensive than the others, or is there costly maintenance (does a professional have to come in regularly)? Or does it have to be replaced after a few years?
I prefer quartz so many choices about the colors different textures and very modern
i am a firm believer in one thing, get what you love, there are minor differences in these materials. If you see something you like and its within your budget, get it. here are some pros and cons of some countertop types.
marble pros. usually beautiful material, i generally recommend for baths only. cons a little pricey and because it is usually soft and porous material i dont really recommend for a kitchen. generally require more maintanence.
granite pros inexpensive, beautiful, made by mother nature,very durable, i believe the best product for the money. cons some require regular maintenance, thats it.
quartz pros available in solid colors and very stain resistant, hard cons very pricey, man made so not much variation within one slab
