Other than losing the ability to customize a home based on your vision, are there any logistical risks associated with purchasing a templated house plan and then bidding it out?

You can not fit any template house plans to every plot. Each is unique.
Exactly this ^. Each plot is unique. It has its own unique soil conditions, slopes, setbacks, exposure to sun and wind. Each site has limitations and restrictions that will be the driving force the design, A template can serve as a good starting point but each individual site needs to be considered and looked with a fresh set of eyes.
