What are your opinions on seams in Hardie backer once its down? Does finishing the joints create a weakness?

not sure, but I’ve done many remodels and have had no call backs for backer/seam issues. I did have one crack on a slab that transferred through some tiles but we remedied that with red guard.
Have you installed showers with the WEDI system? I’ll never use another system!!

Make sure you read the manufacturers directions.
We set durarock and hardi in thenset and screw it down.
Do the tape seams at that time and you can clean up the extra thinset that comes up.
Wait 12 hour or more to walk on the system to give the thinset time to dry,

If you are referring to taping the seams I would have to say no to being weak. The tape is designed to strengthen that space between the boards by filling it with thinset, and then using the tape to minimize expansion or cracking above.

when installing the boards your surface has to be 100% clean. Make sure you use thinset on the bottom of the boards. When installing the boards you have to screw them down using coarse screws. Use mesh tape and thinset join the seams

Never had any issues with that. Just need to follow quality rules
