When should I hire a sheet metal contractor? Should I just leave this type of thing up to my GC?

If you have a GC, yes, you should leave this up to him. Bringing in different tradesman when you already have a GC is not recommended, it can open up room for a lot of headaches. Your GC most likely knows their tradesman for years and are able to get the best pricing but most importantly that can trust their work and rely on them.
