The acronym HVAC stands for Heating, Ventilation and Air conditioning.
The HVAC trade addresses all your bathfan exhaust, kitchen range hood or micro hood exhaust, dryer venting, water heater venting etc. It also covers all the ductwork and equipment for your heating and cooling system whether it be electric, gas or a heatpump. They also might run your gas lines depending on local code restrictions.
HVAC also covers radiant floor and ceiling heat either an electric system or hydronic although they have to work in conjunction with electrical and plumbing contractors depending on local restrictions.
The other answers are spot on. However, a more direct answer would be the heating and cooling of most buildings along with ventilation (bathrooms and kitchens).
A common misconception we have encountered is clients thinking that HVAC means central heat and air. This is untrue. While central air does fall under HVAC, just saying HVAC does not imply that at all. There are a wide range of heating and cooling solutions that are out there. HVAC is the trade (aka mechanical) that installs and services those systems.
