I think you should tell us what you are thinking of and we’ll tell you if it’s advisable or not. There are lots of options that are good fits for counter tops.
Per my experience I would not do any kind of tile. We take alot of tile (including granite tile) out because homeowners HATE the problems grout lines cause on counters.
