What thickness drywall should be used in a house?

Generally, 1/2" drywall is used on interior walls. Some will use 5/8" drywall on ceilings and that is a good idea if a heavy texture is used, but 1/2" will work. Keep in mind that on the garage side of an attached garage you should use a fire rated drywall with similar fire rated doors depending upon the code of your area.

The above answers are correct for construction of a single family home. However, I always recommend my clients to go with 5/8" on ceilings and walls.
The upgrade from the 1/2" to the 5/8" should not be a high cost. If you are building a 2-story home the garage walls will most likely by 5/8" and the ceiling, 2 layers of 5/8".

We use 1/2" drywall on all interior wall. In the bathrooms we use 1/2" moisture resistant drywall, and durarock on all tub and shower walls. All garage walls and ceiling will receive 3/4" Fire Code Drywall

Generally 1/2 in. is used in residential homes. Although, in certain multi family homes they require 5/8 in between separate occupancies for fire rating. Also, 5/8 would be used in a garage or mechanical room for the same purpose. Another note would be to use mold resistant in the bathroom and kitchen (green/purple). Check with your local municipality for code requirements.
