Typically speaking, carpenters are more of the woodworking types and will presumably have more knowledge and experience when it comes to refinishing wood products. If you are just looking to put a fresh coat of poly or two on them then really any of these will work. If you want to strip them down and re-stain and poly, I would start with a Finish Carpenter. Otherwise find a local cabinet making company and see if they have any recommendations.
