A partial kitchen remodel, to a home that is over 140 years old (re-habed in 1980).

I have an over-the-stove exhaust fan that is not vented and a pot rack that I need to have installed. It's application is that the walls in the kitchen are plaster and I've been told that the insulation will require cutting into the wall to install a 2x4 brace between the studs.
